Taco Salad Bowl

Ingredients

  •  3 cups of chopped romaine lettuce
  •  ½ cup of purple cabbage
  •  1/3 cup of sliced cherry tomatoes
  •  ¼ cup of roasted non-GMO corn
  •  ¼ cup of black beans
  •  ½ avocado sliced
  •  8 Siete grain free chips
  •  ½ cup of ground taco meat or grilled chicken strips
     

Taco dressing:

  •  2 tbs. dairy free sour cream (love Foragers brand)
  •  1 tbs. olive oil
  •  1 tsp. honey
  •  ¼ cup salsa
  •  1 tsp. sea salt
  •  Juice from ½ a lime

 

Instructions

    1. In a bowl layer first romaine lettuce then layer on top the cabbage, tomatoes, corn, beans, avocado, and protein.
    2. Stick the grain free chips on the side of the bowl, to “dig in” into salad mixture.
    3. Blend all taco dressing ingredients together in a bowl or blender until smooth.
    4. Drizzle dressing over salad mixture or use Tessamae’s Chipotle Ranch dressing for a quick pre-made dressing!
