Taco Salad Bowl
Ingredients
- 3 cups of chopped romaine lettuce
- ½ cup of purple cabbage
- 1/3 cup of sliced cherry tomatoes
- ¼ cup of roasted non-GMO corn
- ¼ cup of black beans
- ½ avocado sliced
- 8 Siete grain free chips
- ½ cup of ground taco meat or grilled chicken strips
Taco dressing:
- 2 tbs. dairy free sour cream (love Foragers brand)
- 1 tbs. olive oil
- 1 tsp. honey
- ¼ cup salsa
- 1 tsp. sea salt
- Juice from ½ a lime
Instructions
- In a bowl layer first romaine lettuce then layer on top the cabbage, tomatoes, corn, beans, avocado, and protein.
- Stick the grain free chips on the side of the bowl, to “dig in” into salad mixture.
- Blend all taco dressing ingredients together in a bowl or blender until smooth.
- Drizzle dressing over salad mixture or use Tessamae’s Chipotle Ranch dressing for a quick pre-made dressing!
