Southwestern Breakfast Bowl
Ingredients
- ½ cup of cooked quinoa or cauliflower rice
- 1/3 avocado
- ¼ cup cooked black beans
- 4 sliced cherry tomatoes
- 1 handful chopped cilantro
- 2-3 eggs
- 1 lime
- Sea salt
- 3 tbs. salsa (optional)
Instructions
- In a bowl place ½ cup of cooked quinoa or cauliflower rice. Then place 2-3 eggs (hard
boiled and sliced or fried in olive oil), on top. Add 1/3 of avocado sliced, then ¼ cup of
cooked black beans, sliced cherry tomatoes, and garnish with chopped cilantro, fresh
squeezed lime, sea salt and 3 tbs. of salsa (optional).
