Southwestern Breakfast Bowl

 Ingredients

  • ½ cup of cooked quinoa or cauliflower rice
  • 1/3 avocado
  • ¼ cup cooked black beans
  • 4 sliced cherry tomatoes
  • 1 handful chopped cilantro
  • 2-3 eggs
  • 1 lime
  • Sea salt
  • 3 tbs. salsa (optional)

 

Instructions

  • In a bowl place ½ cup of cooked quinoa or cauliflower rice. Then place 2-3 eggs (hard
    boiled and sliced or fried in olive oil), on top. Add 1/3 of avocado sliced, then ¼ cup of
    cooked black beans, sliced cherry tomatoes, and garnish with chopped cilantro, fresh
    squeezed lime, sea salt and 3 tbs. of salsa (optional).
